whoo-hoo chicken
6 chicken breasts
1 cup of ranch dressing
2 cups of Pepperidge Farms stuffing (I substituted Panko crumbs)
6 slices of bacon
Preheat oven to 375.
Marinate chicken breasts in ranch dressing. Dip the ranch coated chicken breasts in the stuffing mixture and cover completely. Arrange the chicken in a glass-baking dish. Top each chicken breast with one slice of uncooked bacon.
Bake for 45 minutes.
My friend, Amber Wooten, and I spent a week together with our children at my sister-in-laws beach house in Duck, NC. We split the task of preparing meals by having each of us cook dinner for everyone (5 kids and 2 adults) every other day. The goal was for fast, easy, and relatively healthy meals that everyone would enjoy eating. Amber’s chicken recipe has since become an easy go-to dish in my household. You too will cheer “whoo-hoo” when the picky eaters in your family ask for more!
