chilled peach prosecco soup

Prosecco is an Italian white wine with a unique quality that lends a celebratory feel. It is often known as the main ingredient in a Bellini cocktail and has been gaining in popularity as a less expensive substitute for champagne.

For a great chilled summer soup add Prosecco to a fruit base of peaches, lemon, zest and ginger. Use an emersion blender to combine the flavors.

Chilled Peach Prosecco Soup

29 oz. of canned peaches
3/4 cup of prosecco
1/2 teaspoon of lemon zest
1 teaspoon of ginger, grated (optional)
garnish with fresh mint

Put the peaches into a large bowl.

Add the Persecco to the bowl of peaches along with the lemon zest and grated ginger.

Use an emersion blender to purée. Soup should be slightly thick. Chill until ready to serve. Garnish with fresh mint.
