Baked Cauliflower


  • 1 cauliflower head
  • 1 onion
  • 2 cloves garlic
  • 1 red pepper
  • 1 cup crushed tomato sauce
  • 2 bay leaves
  • salt/pepper to taste
  • 1/8 cup olive oil

Baked Cauliflower

I love this dish, it has a “stew” quality yet is a lot lighter and it’s a perfect Fall meal or side dish.

    • Pre-heat oven to 350 degrees.
    • Remove cauliflower from stem, cut into bite size pieces, and rinse.
    • Chop the onion, mince the garlic, and cut the bell peper into strips.
    • Saute onions and garlic in olive oil.
    • Add all ingredients into a baking dish, toss, cover, and bake for about 1 hour (or until the cauliflower is tender).
    • **You can add meat, chicken or fish (cut into small pieces) to this dish. The fish should be added 30 minutes into the baking process, while meat or chicken could be added from the start of your cooking time.
