- 2 Tablespoons of cream cheese/li>
- 2 slices of bacon, cooked and cut into bits
- 20 baby spinach leaves
Melt 1 tablespoon of butter in 10-inch nonstick skillet over medium heat
add 2 or 3 egg whites. As eggs starts to set, top omelet with cream cheese, spinach and bacon bits. Fold omelet in half and continue to cook for another minute. Slide onto a plate and serve.
You could also substitute the above ingredients for salmon, chives and cream cheese.
